Bone broths are especially aromatic. The bone with the remains of meat is most often used. It is better if the animal is young, up to three years. Then the fragrance will be softer and more pleasant, and the fat will be less. For some soups, it is recommended that the bones with meat residues be fried beforehand, or smoked.

The main advantage of fish broth is its cooking speed. It is very quickly brewed. For this basis, absolutely any fish - carp, perch, pike, trout, is suitable. To make it, you need to pour fish waste with water, add onions, carrots, bay leaf and peppercorn and boil. When the fish broth is ready completely, it must be filtered.

For mushroom broth perfect fit white mushrooms, mushrooms or chanterelles. Mushrooms can be either fresh or dried. After experimenting with the products, you can get a lot of delicious dishes based on the mushroom broth. Sometimes even a mushroom broth with meat or chicken is not badly combined.
