The cooking process.

The fact is that when preparing wine, black gooseberry is not washed, but only sorted. Therefore, a significant role is played by the purity of the fruit, carefully collected from the bush.
- Gooseberries carefully mash.
- Boil the syrup - put the saucepan on the fire with water, add the sugar and bring it to the boil. When the sugar is completely dispersed, remove the container from the plate, cool the syrup.
- In a clean jar, pour the pulp and juice that formed during the grinding process, pour in the syrup.
- Use a wooden spatula to mix the contents of the jar, cover its neck with a cut of gauze or linen cloth and transfer it to a warm place for a week.
Tip! Since the fermentation process will occur quite intensively, the jar should be installed in the pelvis. And that the juice does not pour out, then the container should be selected in such a way, when all the ingredients will occupy no more than 2/3.
- After a while, the surface of the mash will rise - it should be removed with a wooden spatula, and pour the liquid into a clean container with a water seal.
- After this drink is left in a warm place for another 2 months. About the stopping of fermentation you will be informed by a water trap.
- Young wine is filtered and bottled in convenient bottles, then transferred to a cool place for 6 weeks for final ripening.
Pork with "Black Negus"
Prepare the ingredients:
- 700-800 g of pork;
- 250-300 g of black gooseberries;
- 2 heads of onions;
- 130-150 g of crushed walnuts;
- 2-3 cloves of garlic;
- 100 ml of cognac;
- 2-3 tablespoons lemon juice;
- lemon peel;
- two sprigs of fresh mint and thyme;
- a pinch of black ground pepper;
- salt;
- vegetable oil.
The cooking process.
- Cut the meat into small pieces, you can dice with a side of 2-3 cm. If you have pork on the bone, then cut it into appropriate portions.
- Make marinade - combine cognac with lemon juice. Marinate meat for several hours.
- Preheat the oven to 200 ° C.
- We cut the onions in half rings, chop the garlic with a knife and fry everything in a frying pan, in which the meat will be baked in the oven.
- In a separate frying pan, give the meat a golden crust, shift it to vegetables, add herbs, gooseberries, lemon peel, nuts, pepper and salt.
- The container is closed with a double foil or lid and put in the oven for half an hour.
- After 30 minutes, remove the cover, turn on the grill mode in the oven or simply move the tank to the uppermost shelf and lower the temperature to 180 ° C.
- Bake for about 10 minutes.
