Pumpkin is a bright orange autumn vegetable that gives a lot of space for the flight of fancy to many culinary specialists. So one day, there was a pumpkin soup with ginger - a fine dish with its own taste, with incongruous, at first glance, ingredients. It is very fragrant, has a tender sweetness of ripe pumpkin and a piquant ginger note. Shall we try to cook it?

Pumpkin
So, in order to quickly and easily cope with pumpkin, you need to use the following tools: a knife, a tablespoon and a vegetable peeler. With a sharp knife we cut the vegetable into two parts and using a tablespoon carefully choose from each halve all the seeds.
Now you can cut halves into smaller segments, better, into shares in the form of a month. If the pumpkin you picked, the old harvest, then, for sure, its skin will be very dense. And to clean it, again you need to use a sharp knife. With a fresh vegetable of this season, the peel is more pliable and it is possible to cut it off with a conventional vegetable peeler.
Note! Rough peel usually occurs in large specimens of rounded shape, and in some varieties, for example, as in pear-shaped pumpkin squash, the skin is relatively soft!

As for ginger, the main problem is usually its high-quality cleaning. After all, it is very important to make sure that the dish does not have its thin skins. The tools you need in this case are a tablespoon and a small sharp knife.
So, take the ginger and rub a tablespoon to peel off a thin skin from it, moving towards you. First, we process short parts - lateral processes and only after scraping the skin from its main part. In order to reach all inaccessible zones, it is necessary to cut off parts that have already been cleaned, and continue cleaning the remaining areas.

Classic recipe
This recipe for pumpkin soup with ginger can be called basic, as it includes a minimum of ingredients. For five servings we will need:
- pumpkin - 700 g;
- carrots - 220 g;
- garlic - 3 teeth;
- ginger root - 4-5 cm;
- cream 10-20% - 200 ml;
- salt.
Let's go to the cooking. Pumpkin chopping random pieces, onion shred, carrots cut into thin slices. Prepared vegetables, transfer to a heated frying pan and fry in olive oil for 10 minutes.
In a saucepan pour a liter of water and bring it to a boil. We put there the peeled and sliced ginger slices, add the toasted vegetables. Cook everything on low heat until the ingredients are softened.
Note! If you do not like spicy dishes, then ginger can be put a little less!
When all the vegetables have reached the required degree of readiness, we will navigate our soup with a submersible blender. If you use a food processor for this purpose, do not forget that some of the bowls are not designed for too hot liquids - the temperature of the soup in this case should not be more than 80 °.
It only remains to add cream and bring the soup to taste with salt.
Spicy soup with spices
For pumpkin soup with ginger and spices you will need:
- pumpkin - a pound;
- sweet potato - 1 root vegetable;
- ginger - 3-4 cm;
- carrots - 2 medium roots;
- onion - 1 head;
- garlic - 6 teeth;
- coriander fresh - a small bunch;
- coriander - 1 teaspoon of seeds;
- olive oil - 15-20 ml;
- butter - 60 g;
- Worcestershire sauce - half teaspoon;
- salt, pepper.
Let's get started. First we clean pumpkin and babat, cut them into large pieces.
Important! In the sweet potato, like the pumpkin, there is a white interlayer under the main skin, which must also be cut off. And you must remove all the whitish part, as, otherwise the soup will be bitter!
We wash cilantro under running water. Carefully shake off excess water and separate the leaves and roots. About a dozen rootlets and clean stems are laid out on a paper towel, so they completely dried out.
We release ginger from the peel, peel off the garlic cloves, and peel the onions and carrot root. Stems and roots of cilantro, garlic cloves and ginger root are finely shredded. Chop the onion into large pieces, carrots cut into thick "penechki."
Absolutely all the prepared vegetables and parts of the greens are laid out on a baking sheet or placed in a large baking dish. Top the coriander seeds, lay out the cubes of butter, sprinkle everything with Worcestershire sauce and olive oil. Solim and pepper. Thoroughly mix the products with a spoon or just hands and send it to bake for about 20 minutes.
Important! The temperature in the oven should be small - about 180 °, so that the vegetables are evenly cooked and not burned at the same time!
As soon as you notice that the pumpkin is covered with a light crust, we take out the baking sheet and transfer all the ingredients to a pan or to a large saucepan. We pour in water - it should cover all the vegetables. In this case, it is advisable to pour the water in the baking tray on which the products are baked, so it will "collect" all the remaining fragrances and small pieces.
Turn on the middle fire and bring our future soup to a boil. Cook for about 4 minutes, after which we grind everything in a blender. We bring the dish to taste with salt, sprinkle with pepper and pour on plates.
Note! The sweet potato in this recipe is used solely to make the soup more sweet. If the pumpkin you choose is sweet enough, then you can put the yam much less, or not at all!
Cream-soup with shrimps
Cream-soup of gourd with ginger and shrimp includes the following set of products:
- pumpkin - 650-700 g;
- ginger root - 2-3 cm;Onion - 2 heads;
- carrots - 1 small root;
- potatoes - 2 small roots;
- cream - 100 ml;
- butter - 40 g;
- shrimp;
- salt, pepper.
Note! In this recipe, you do not need to use cream, but if you want a soft velvety texture, then add them all the same!
Set the pan on the fire with water and let it boil. Purify and chop randomly pumpkin, potatoes, shinkuem onions, free from peel and cut the roots of carrots with circles. Onions are fried in butter until golden brown, carrots and pumpkin sprinkle with vegetable oil and bake in the oven for 15 minutes.
We send potatoes, pumpkin, carrots, onions to the boiling water along with the oil on which it is fried. We clean and slice ginger slices and also add to the pan.
Cook for about 20 minutes. We check the vegetables for readiness and we blend with a blender, and we interrupt the ingredients for a long time, so that they turn not just in mashed potatoes, but into a uniform glossy creamy mass.
At the end of the soup, salt and pepper, if you want, add a little cream and a slice of butter. Once again, we all warm up( practically bring to a boil) and pour on plates. In each plate we put 3-4 fried shrimps in cream butter.
