We select the ingredients for the preparation of sushi
The rice must be either special for sushi, or round, but in no case long-grain. This is due to the stickiness of rice: the rounder the grain of rice, the more sticky it will be during cooking, and the sushi will not decay mainly because of the sticky properties of rice and algae.
Algae should also be chosen carefully: there are very thin or thick sheets, and there are not whole algae, but from pressed cut pieces that can easily decay during cooking. Also, do not forget that in seafood, seafood is usually used, although modern sushi bars of the western type are just not placed in this dish, but still the classic option is the use of smoked red fish - salmon or trout.
