Zyrians are an obsolete Russian-language name for Komi. They live in the north of Russia, most of them in the Komi Republic.
The culinary traditions of this ethnos, as well as others, are determined by the place of residence. From time immemorial, the Komi were engaged in hunting and fishing. From here and the menu, in which the dishes from fish and meat prevailed. And they can not be called exquisite. All food was prepared very simply, without the use of spices, sauces and other varieties of its additives.
Winter in these parts is very long, and in the short summer the Komi tried to make as much supplies as possible. Salt and sugar were scarce goods, so the products were dried( dried), sugared.
In the past, salted fish was offered to tea to shade and emphasize its taste.
Strong drinks were not in honor, but the dense and invigorating sur( homemade beer) on holidays in the past were given to children.
A special role was assigned to bread. It was never removed from the table - it is a symbol of prosperity.
And branded dishes of the national cuisine of the Komi people and today are called Shanki and Cherinyan( fish pie).
To everyday food you can include:
- porridges, boiled and steamed;

Preparation of dishes
By the way, it is believed that in Russian the word "shanki" came from the Komi-Zyryansky and is formed from "Shondi", which means "sun".The methods of baking shaneg very much. They are prepared both yeast and fresh. No less options and fillings: it can be potato, curd, berry, pea, cereal.
The secret of the queenine is literally hidden inside. Fish for filling are used, as a rule, entirely. In the old days, they only gutted it, but did not take scales. And two-thirds of the pie is its contents, "peeping" out of the dough. The most delicious fish, of course, is from a real oven. But now it can be baked in the oven.
