A bit of history

Historical background: the first in the world who invented ice cream were the ancient Chinese. Of course, it was not exactly the ice cream that we used to see on the shelves of modern stores. Then it looked like a frozen lemon dessert, in which special flavoring fillers and water were necessarily added. Naturally, ice cream, like every novelty in those days, could only afford rich people.

Since the XIII century it began to be made in Europe. For the appearance of this dessert, Europeans need to say "thank you" to the famous Italian traveler - Marco Polo. Since then, ice cream has been treated only to the most distinguished guests at the courts of kings and emperors. And only in the XVIII century the first industrial production of this sweet chilled dessert appeared.

At first ice cream was started to be served by "mere mortals" in German cafes. The popularity of this dessert did not take long. In a couple of years, its recipe has been enriched with many new ingredients. Great demand was for ice cream with vanilla powder, nuts, pieces of fresh and dried fruit, chocolate, various jams and even rose petals! As for the "packing" of this dessert, the Americans were the first to note here, as they invented a popsicle and ice cream in a waffle cup.

In Russia, the first large-scale industrial production of ice cream appeared only in 1930.At first this dessert was made using a fairly simple technology: milk( cream) was beaten with sugar and butter, and the product was frozen. After the mixture solidified, the ice cream was stitched with a knife, added to any jam and enjoyed a chilled sweet dessert.

Now, there are many varieties of ice cream, and manufacturers do not get tired to contrive to come up with unprecedented recipes. Now, ice cream is sold with all imaginable fillers and without them, in the most beautiful packages, of any weight, color and taste. But almost every one of us "got" to a poor-quality product: then to taste - solid "chemistry" and water, then the color - in nature does not exist, it is sour and the like. In order not to spoil your mood, next time try to use our advice on how to choose ice cream.

Read the label carefully!

If you want to get a really good product, first of all pay attention to its label. All labels on the package must be clear, not blurred.

The poor quality of the packaging suggests the same manufacturer's attitude towards meeting the recipe for ice cream and selecting the ingredients for its production. If the package looks normal, then you can go to study the composition of the dessert.

The GOST mark on the wrapper indicates that this ice cream is a natural milk dessert made of milk( certain fat content) and butter, as well as other components acceptable by state standard. The sign TU( technical conditions) on the package of dessert gives the producer the opportunity to fantasize on the topic of the recipe under the full program. Although, of course, there are some exceptions. It is possible that for this ice cream recipe, GOST has not yet been created due to a number of bureaucratic reasons, and so far it exists only in the form of TU.Unfortunately, in products manufactured according to specifications, it is allowed to use cheap palm oil, flavorings, dyes and flavor additives that will not add to your health. Even if such an ice cream looks like a filler in appearance and taste, but if it melts, then you will find a completely unappetizing mucous mass.

"Especially gifted" manufacturers can also cheat on the weight of ice cream. You read on the package in large type "150", and in small letters "ml" is written. Naturally, the volume in milliliters does not correspond( it is greater) to the mass in grams.

Sometimes on the label you can see the inscription "fatty substances" or "vegetable oils".Do not buy these products, because these euphemisms are often replaced by the phrase "palm oil."

The package must include all the mandatory items: date and time of manufacture, shelf life, net weight( rather than volume!), Composition, energy and nutritional value of the product, the manufacturer's address.

If you want to find real ice cream, then look for the inscription on the package "milky", "plombir" or "creamy", without clever additions and clarifications. The inscription of the type "milk-cream plombier" does not guarantee even the taste of a real seal. Or "vegetable-creamy", just imagine the "vegetable" milk from which such ice cream is made. Such modifications are made not in accordance with the basic requirements of GOST, but according to simplified TU standards.

As a rule, you can find these important additions only on the back of the label, and even in small print. It is important that GOST prohibits the replacement of natural milk fat with inexpensive analogues of plant origin, which may not be specified in the TU.

Popular varieties of ice cream: which one to choose?

  • According to the State Standard, natural cream ice cream contains at least 10% of milk fat and 14% of sugar, but not its substitutes. The taste of this dessert is perfectly familiar to all the children of the Soviet Union.
  • Plombir must be fatter than cream ice cream. There by the standard of milk fat to 15%.
  • The most delicious was formerly the chocolate ice cream made according to GOST.Its composition should include chocolate up to 6% or cocoa powder - 2.5%.Ice cream with cocoa powder, of course, is cheaper.
  • Ingredients of walnut ice cream according to standards are 6-10% of nuts. Therefore, if you bought such an ice cream, and only its tops are sprinkled with nuts, then you are deceived by the producers.

The least caloric ice cream is fruit and berry. They contain only 1% of fat, and therefore it is ideal for those who follow a diet. But, as practice shows, such desserts will not do you good. All because to produce ice cream with natural juices and berries is simply unprofitable. These natural supplements are quite expensive. In the best case, in the package with the inscription "fruit ice" you will find a restored fruit puree - a natural powder of berries or fruits, which is then diluted to the desired consistency. Well, in the worst case. .. you do not even need to know what might be there.

So carefully read the text on the label! If it says "concentrate from natural berries( fruits)", "nectar" or "puree", then such ice cream will be tasty and useful, but its price will be quite high.

Another tip: choose frozen desserts that contain additives from local fruits. It is clear that ice cream with a banana flavor in Russia contains a bouquet of flavorings. In addition, natural ice cream can not be bright purple or bright green. Most likely, chemical dyes were added to such products.

The consistency of ice cream can also be different. Tempered and soft ice cream.

  • Soft ice cream is stored at -5gr.С, and its storage time is low. Such desserts are served, mainly in cafes and restaurants. So pay attention to the condition of the café in terms of sanitation. If his condition leaves much to be desired, then buying ice cream there is dangerous. When storing the dessert longer than it is released, there may be a disease-causing microorganisms.
  • Hardened ice cream has a much longer shelf life, but it should be kept in refrigerators at -18-25 degrees Celsius. It is solid, and very well tolerates transportation.

There is another type of ice cream - dry ice cream. This semi-finished product can be brought to readiness at home. It is accompanied by an instruction, and if everything is done accordingly with it, then you will get an excellent taste of dessert. But it's better not to buy such attractive sachets of dry ice cream, as it will not benefit you precisely. To prolong the shelf life of such desserts, special preservatives and emulsifiers are added in them.

Summing up

Packing your favorite ice cream should be without deformation or damage, text and pictures should not be smeared. A slanting, fuzzy picture or signature text with grammatical errors should alert. Such negligence of the packaging of the product is unacceptable, besides, imagine how such a manufacturer observes the recipe for the production of your favorite treat. If the ice cream does not have a package, but is released in a waffle cup, then it should have a circular label on top.

After such a theoretical preparation, you can safely go for your favorite dessert. By the way, British scientists have proved that eating ice cream helps to improve mood and sense of happiness. Scientists studied the brain of people at the time of eating ice cream, and came to the conclusion that this product affects the areas of the brain responsible for the manifestation of positive emotions.
