An important indicator for olive oils is their acidity. It should be in the range from zero to five percent. At a higher percentage, the oil will be more astringent and bright to your liking.

This oil is considered a real delicacy, which you can try, without even cooking, but simply dipping fresh bread into it. If you want to buy any of the unrefined sunflower oils of cold pressing, try to look for it at a specialized fair or in a health food store. It is done by small farms, selling in most cases to a spill. It is much thicker than the usual, as for color, it is amber-brown.
