  • 2 medium heads of garlic;
  • 1 pod of chili peppers;
  • 1 bunch of celery;
  • 1 bunch of fresh basil;
  • 1 bunch of green dill;
  • 1 dill umbrella;
  • 1 horseradish;
  • 50 ml of water;
  • 1 teaspoon of salt;
  • 1/3 teaspoon of sugar.

Tip! Use berries of varying degrees of ripeness and then your sauce will have a particularly expressive taste and aroma!

First we deal with fruits: they must be carefully sorted and washed under running water. Do not allow vegetation debris to get into the workpiece. Pour the gooseberries into the saucepan, add the indicated amount of water and bring it to a boil over medium heat. Extinguish for several minutes. We remove the softened berries to a homogeneous mass and return them again to the fire.

Tip! To make the cooking process faster, the mashed potatoes should be cooked in a wide container - so the excess liquid will evaporate literally in 25-30 minutes!

Puree from gooseberry must be constantly stirred with a wooden spatula, so it does not burn. And while it boils, we turn to the rest of the ingredients.

Wash the greens, remove the garlic from the husk, chili - from the seeds. We put everything in a blender and grind it. After the berry puree boil twice, we add to it a lot of greens, garlic and pepper, as well as salt and sugar. Cover the lid and cook for about half an hour. Ready sauce poured on sterile jars.

Spicy, fragrant, as if specially created for shish kebab. This dish is prepared without heat treatment, but because it is not only delicious, but also very useful. And the simplicity in cooking allows you to create such a sauce in just a few minutes - right at the dacha near the barbecue, while the meat is being roasted!

To prepare Adzhika from gooseberries you will need:

  • 900 g fresh berries;
  • 3 heads of garlic;
  • ½ piece of chili pepper;
  • 1 large Bulgarian pepper;
  • large bunch of fresh greens;
  • 30 ml of any vegetable oil;
  • salt.


We go through gooseberries, we pull off the tails, remove the leaves, we thoroughly rinse in running water. We lay out on a paper towel and leave for a while, so that the berries dry out.

  • 600 g of apples;
  • 250 g of onion;

  • 190 ml of vinegar.

We remove garlic and onion from the husks, finely chop and add them to the saucepan. Pour 2-3 tablespoons of water and simmer the vegetables until they soften, then discard it in a colander.

Gooseberries are sorted, washed, cleaned of seeds. With apples peel, remove the seeds and optionally cut. Prepared ingredients are piled in a saucepan, add vinegar, salt, sugar, as well as stewed onion and garlic.   • 400 g of sugar;
  • 200 ml of white wine;
  • 80 g of potato starch;
  • 1.5 liters of water;
  • buds of cloves, ground cinnamon and nutmeg to taste.




Pour the water into a saucepan and bring to a boil. We dissolve sugar in it, add dry spices, cook for about 5-7 minutes. We carefully sort the berries, and put them into a clean container. Fill them with spicy boiling syrup and leave for a few minutes, after which we rub everything to homogeneity. The resulting mass is returned to the plate, brought to a boil and in small portions, we introduce starch. Stirring. We pour the wine, boil again and immediately remove it from the fire.

Sweet brews without cooking

Mousse with orange

To prepare this mousse you will need:

  • 2 ripe sweet oranges;
  • 1,5-1,6 kg of sugar.

We sort out the collected fruits of gooseberries, discard spoiled, tails and pedicles cut. Citrus fruits are thoroughly washed, doused with steep boiling water, arbitrarily cut and choose seeds. We pass the prepared ingredients through a meat grinder, then transfer the mass into a blender, add sugar and whisk for several minutes. We make sure that the sugar is completely broken.

The finished air mousse is spread over sterilized jars and closed tightly with lids. We store it in the refrigerator or in a rather cold cellar.

Gooseberries are carefully sorted and discarded spoiled berries, after which we pour steep boiling water and dry it on a towel. We put the prepared fruits in the bowl of the blender and grind it. If you use a meat grinder, it is desirable to install the smallest grate and pass a gooseberry a few times through it. In the resulting mashed potatoes add sugar and leave at room temperature for several hours. From time to time, the mass must be mixed. When the sugar is completely dispersed, we spread the raw jam on dry sterile jars, top it with a small portion of sugar and seal it tightly.

  • 4-5 kiwi fruit;
  • 2 kg of sugar.
